Green Tea Salmon,

Miso Veggies & Coconut Rice

Ingredients

You need a blender

Serves: 4

Salmon

  • 4x120g salmon fillets with skin on

  • 2 green tea bags or matcha powder

  • olive oil

  • salt and paper

Rise

  • 300g basmati rice

  • 400g tin of coconut milk

  • 1/2 lemon 

Vegetables​​

  • 200g mangetout or green peas

  • 200g broccoli

  • 300g bok choy or any green veggie you like

  • 1 red chilli

  • 3cm ginger

  • 1 tbs miso paste

  • 1 tsp honey

  • 2 tbs light soy sauce

  • large handful coriander

  • ½ lemon

  • 1 lime
